Recipes

Aren't we all always looking for a good, new, quick recipe? This has been the topic of discussion among my friends lately so I decided to post a few quick easy recipes that we've all shared with each other.

Traci shared these super quick easy chicken recipes:

Garlic Chicken
1 lb chicken breast
1 cup herb stuffing mix (I use Pepridge Farm)
1 cup mozzarella cheese
1/2 cup Parmesan cheese
1 tablespoon milk
1 egg
4 tablespoons butter
1 clove garlic
lemon juice

Mix the stuffing, mozzarella, and Parmesan together. Mix the egg and milk together. Dip chicken in the egg/milk mixture then roll in stuffing mixture. Place in baking dish. Melt butter and garlic together. Pour over chicken. Then sprinkle with lemon juice. Bake at 350 for about 35-45 minutes.

Italian Chicken
4 boneless skinless chicken breasts (halves)
3 large eggs, beaten
1 cup Parmesan cheese
1 cup fine dry Italian bread crumbs
1/4 cup Italian salad dressing
1/4 cup butter

Wash chicken and pat dry. Dip chicken into eggs. Combine cheese and bread crumbs. Coat chicken thoroughly with crumb mixture. Place on greased baking sheet. Drizzle with salad dressing and place pats of butter on each piece of chicken.

These next two recipes are from my favorite grocery store Publix. Not only do they have 'car' grocery carts so that Landree loves going there and driving around the store, but they also give her a cookie and a balloon while we shop!!! They have the best meat and produce and everyone that works there is so nice-it's the Anti Wal-Mart. Most afternoons they also have a lady cooking at the front of the store (one of hundreds of recipes that they have online) and they have all the ingredients in a cooler near the front so if you like it you grab all the ingredients and go. Here are a few we've tried and loved. They are really fast, easy and good!

Southwestern Pizza With Jalapeño Caesar Salad
8 ounces Deli pre-sliced roast beef
1/3 cup fried peppers/onions
6 ounces package sliced portabella mushrooms (rinsed)
1 tablespoon hickory-flavored marinade (Dale's seasoning)
1/4 teaspoon kosher salt
1/8 teaspoon pepper1
12-ounce prepared pizza crust
cooking spray
1/4 cup refried beans with chiles
1/3 cup taco sauce
1 1/2 cups shredded Mexican-blend cheese

Place oven rack in center of oven; preheat to 375°F. Preheat large sauté pan on medium-high for 2-3 minutes. Cut roast beef into 1/4-inch-strips.

Place beef, fried peppers/onions, mushrooms, marinade, salt, and pepper in pan. Cover and cook 3-4 minutes, stirring occasionally, or until heated.

Meanwhile, place pizza crust on baking sheet; coat crust with cooking spray. Spread refried beans over crust; spread taco sauce over beans.

Drain beef mixture; spread evenly over pizza. Sprinkle with cheese. Bake 15–20 minutes or until cheese melts. Let stand 5 minutes; slice and serve.

For the salad: (we love this salad dressing!)
1/4 cup Caesar salad dressing
1 tablespoon green pepper sauce
1 bag romaine salad blend (8–10 oz)
3/4 cup seasoned croutons
3 thin slices pepper Jack cheese (2 oz)

Whisk salad dressing and pepper sauce together in salad bowl.

Add lettuce and croutons. Break cheese into bite-size pieces while adding to salad. Toss and serve.

Steak Diane, Baked Potatoes, and Vegetable Medley
1 1/2 pounds boneless beef sirloin steaks
1/2 teaspoon seasoned salt
3 tablespoons butter
8 ounces pre-sliced fresh mushrooms (rinsed)
1/4 cup pre-sliced green onions
1/2 cup brown gravy
1/4 cup sour cream
2 tablespoons steak sauce
1/4 cup red wine

Preheat large sauté pan on medium-high 2–3 minutes. Cut steaks into 4 portions; sprinkle both sides with seasoned salt. Place butter in pan; swirl to coat. Add steaks (wash hands); cook 6–8 minutes on each side or until internal temperature reaches 145°F (for medium-rare). Use a meat thermometer to accurately ensure desired doneness.

Remove steaks from pan; set aside. Add mushrooms and onions to same pan, stirring to loosen browned bits left on bottom. Cook 2–3 minutes, stirring often, or until browned. Meanwhile, combine gravy, sour cream, and steak sauce in small bowl.

Stir wine and gravy mixture into pan; cook 1–2 minutes, stirring often, or until mixture boils and sauce begins to thicken.

Return steaks to pan; reduce heat to low. Cook 1–2 minutes to blend flavors. Serve.

My friend Jennifer makes this good recipe for Beef Tid Bits

Beef Stew Meat or Sirloin cubes
1 or 2 cans of mushroom soup mix
1 packet french onion soup mix
1 can water

Mix all the above in a crock pot and cook on low all day. Super easy!!!

I serve with rice, Jennifer serves with egg noodles sometimes too, and a veggie. Easy!

And my friend Jennifer E. just tired a recipe for Roasted Banana Ice Cream With Warm Peanut Butter Sauce. She said it's too die for. She has the recipe on her blog. I need to get an ice cream maker before I can try this one. It sounds divine!!!

here is a great recipe...

homeade nachos. first get you some cheese. Next get you some chips. Then put the chips on a plate, put the cheese on top of them. place into the microwave until cheese is melted. It's yummy.

just kidding...great recipes though. I love them!
